High Sierra and El Capitan on same HD?

I have a 27" iMac with a 2 TB drive and 120 GB SSD. It's running OS 10.11.6 and has more than half of its disk space available. Can I format the HD so I can run El Capitan on one partition and High Sierra on the other? I use Photoshop CS6 And Lightroom 5 and understand that neither will work with High Sierra.

Yes.

Another couple possibilities:

1. Use Parallel Desktops and run as many OS's as you want.

2. Use Carbon Copy Cloner to make a backup / clone of your existing hard drive. Then boot to external drive by holding Option key while booting. How to choose a startup disk on your Mac

Once you are running on the external drive, upgrade it to High Sierra.

You can use the option key while booting, to choose the internal drive running El Capitan or the external drive running High Sierra.
