Taking away the ability to manage apps via iTun...

The new iYunes REMOVED the ability to manage apps via the desktop and sync. It is NOT possible to do this on the phone now such as moving between screens EASILY.

Depending upon what OS X version you have on your Mac (I'm assuming that 10.4.10 is not correct) you could use Apple Configurator 2 from the Mac App Store, that lets you modify a device's homescreen layouts.
