back to IOS10

I installed IOS11 on my iPod Touch and found out, my playlist fromItunes are no longer synchronized on my iPod. That is, the podcast are, but I cannot find the playlists I made. So I want to go back again to IOS10. I tried to reinstall my iPod and did put back the reserve copy made with IOS10, but IOS11 is still there ;-( How to get 10 back again??
