Tracks on classical albums are usually associated with the movements of a work. I would prefer that the entire work were stored as one unit and played together. I can inconveniently do this manually every time by creating a playlist, but that is troublesome.

You cannot get iTunes to merge CD tracks except at the time they are ripped. You can try the Work and Movement features or use a third party tool to join tracks together.
