Apple Watch Series 3 compatibility

Due to my particular situation and bad timing, I am hoping someone can answer this question, as I can't seem to find it anywhere else.

 

I currently own an iPhone 5s and will be getting an iPhone X by hopefully late November (if not later). I will be getting the Apple Watch 3 (GPS + Cellular) shortly. I know the Series 3 (GPS only) works with 5s and up, while the Cellular variant only works on iPhone 6 and up (as stated in the fine print). However, Will the Cellular version still work with my 5s if I do not use the cellular feature of the watch until I can get my new phone? Or will I have to leave it sitting in my house for the next month or two?

 

I just thought this could be similar to the iPad w/ cellular, how you can use it like a normal iPad without cellular until you decide to activate that functionality of it.
