Questions about New MacBook Pros

My MacBook Pro is getting long in the tooth - 7 years - and I'm starting to look for a replacement. My current computer is a late-2011 model that I upgraded to two SSD's, pulling both the old plater drive and optical drive. I have the OS and apps on one drive, and my user data on the other. Combined usage is about 586 gigs of data.

 

What I've noticed is that the new MacBooks do not have space for a second drive so the dual setup doesn't seem to be an option. With the new OS and drives, is there that much performance gain from separating the OS and user data? I use Final Cut Pro, music writing software that has to access large sound files, and am starting to use Logic Pro, so I need some space and performance. I noticed a huge improvement when I started using the second drive.

 

The models with 1 TB drives are quite a bit more expensive than 500 GB models. An external drive would be an easy solution if there wasn't significant performance loss, although an external drive is not always convenient in my work environment.

 

I've been SOOOO fortunate that this MacBook has lasted so long, but now I feel like I'm out of touch with how the new hardware works. Am I worrying about things that are no longer issues? May be old school here, but I really liked the ability to easily upgrade memory and drives yourself.

 

Any suggestions or thoughts are much appreciated.
