If you have a Mac and have the messages app running on it via text forwarding, you may find that you can recover a deleted conversation by simply striking up a conversation with the individual concerned again.

Otherwise, your only option would be to restore your phone using a backup that was taken while the conversation was still on the phone, be aware though that unless you have manually archived backups through iTunes, the backup feature only keeps the last 3 backups and if your backup feature is working correctly this will only cover the last 3 days.

As a last resort, if the messages were deleted recently you may wish to search for iPhone recovery software by searching with Bing. I don’t have any to recommend but please be aware that this type of software often comes bundled with adware or in some cases can even cause data loss on your phone.
