Magnifying everything

I am trying to decide whether to get an iPad Pro 10.5" or 12.9". It isn't just a question of cost. The tradeoff is "aging eyes" versus "compactness for travel." The 12.9" is only interesting if there is a way to set it for "bigger, not more." That is, I want to put a 12.9" iPad next to a 10.5" iPad and see just about the same things, just larger.

 

We were in the Apple Store doing some hands-on and asked "can you magnify the screen?" The rep said "absolutely" and showed me a setting, but later on I noticed that it had not done what I wanted. It only magnified text, and only in some places. The main "finder" screen (application icons) did not change at all. The text under each icon was still pretty small. I started to play around in the settings menu and seemed to find more than one relevant setting. I didn't have time to figure them all out. Can someone summarize the magnifying options and what each of them does, and, in particular, is there a way to achieve what I want?
