How do I backup old iphone to pc without access...

I have a new 8+ to replace 7+ that cant read ANY sim card but otherwise is fine. Im trying to back up the old 7+ and load that backup onto the new 8+.  I was stunned to find I cant do easy backup to pc via the latest version of itunes which has abandoned backup and synch functions.  I tried loading the 8+ from my most recent icloud backup, but it didn't work (poor wifi).  is there a way to back up my old phone to my laptop?  Im out of the USA for next 4 months and need a working phone with all my stuff.

iTunes has not removed backup or sync functionality. It's only removed the management of apps and iBooks.
