Using an iPad with a Bluetooth switch as a comm...

I am a teacher in a special needs school and I am trying to set a pupil up with an iPad to use both as an educational tool, but also as a communication aide. We are using a bluetooth switch, as the student has very limited use of his arms, therefore will operate the iPad using his head. The student has good cognitive ability, but unfortunately due to quite substantial brain damage from a severe asthma attack, has lost his speech. Our aim is to use the technology to give him his voice back and help him to communicate to his peers, friends and family.

I am looking to see if anyone else has used a similar method, and I would also like to have support off apple and anyone who is using this method. I am based in South Wales, but am happy to work with anyone who can offer any help or guidance.
