Watch 3 LTE Sprint has no UMTS?

Just watched Apple Event and an interested in Watch Series 3 w/LTE.  Looking through specs, my carrier, Sprint, has subtext of “does not support UMTS”.  Researching this, I see it means no simultaneous voice/data.  My question is if I would still be able to use the watch without the phone for data streaming (Apple Music) and/or making and receiving calls, just not at the same time?  So if listening to Apple Music, no calls will come through?  If I wanted to make a call, I’d have to turn off Apple Music?  I am trying to avoid dopping north of $400 on a watch if I can’t use it’s capabilities.  Thanks.
