My mail server is responding with this error : p16-imap.mail.me.com timed out. Was working fine until last week. How do I get access to my iCloud mail again?

Try going to System Preferences>iCloud, uncheck Mail, restart your Mac then go back and check Mail again.  (This removes, then adds back your iCloud email account.)
