Why can’t I restore my iPhone 8 from my i...

After purchasing a new iPhone 8, I am unable to restore my old phone’s information from my iCloud account. When I use my iCloud login, it is not showing my most recent backup. However prior to switching phones, I confirmed my information had been backed up to the cloud that day. What can I do to find my most recent backup to restore my information on my new phone?
