How To ADD Your Apps, ORGANIZE them on a new iP...

I just bought an iPhone 8 and I cannot restore all my apps through iTunes because it needs the infamous 12.7.

I did a backup restore from my old phone updated to ios 11 and I was then able to use Configurator 2 to restore the backup on the iPhone 8 (Configurator downgraded from 2.5 to 2 because the new one requires iTunes 12.7 that's a disaster!)

If  this is not enough, I have another problem: the app store on my brand new iPhone crashes immediately

when I go to download my Purchased apps. How can I redownload the apps, my apps?!?

Do I need to use telepathy?

I'm a long time Apple Customer and I spent a lot of money for the new iPhone and now I have to manually rearrange all the apps one by one?! Beside Configurator is anything out there to help at least to organize  my apps? My finger's tendon is sore

I have a lot of apps, but for sure if Apple is not going to change its politic to make things worse

I will not buy more apps and avoid to update in the future
