Hi, how do i get rid of an old email

Hi, when the itunes screen pops up when I turn the computer (windows 10)  it says 'sign in' I'm having trouble logging in from the computer, itunes asks me for my apple password but the email address that I changed (Hotmail is not responding) is not highlighted so I cannot change to my new email....sound confusing? lol! Any help would be handy thank you. But I can sign in once I get to the apple website with my new apple id and password.
