Apps on iPad via iTunes?

How can I view and manipulate apps on my iPad via iTunes? Every screen on my iPad used to show on iTunes but it or I lost the ability to do that...

You cannot any more.  Apple removed the ability to Manage apps in iTunes 12.7 on a computer.

If you have older Apps that are no longer available in the App Store and need to be synced to a device, you can drag the IPA files from the Mobile Applications folder  to the device in iTunes and it should still be synced.

Beyond that,  all App management should now happen on the device itself via the App Store App.
