I'm going to start using my daughter's apple watch. How do I delete her content and pair it with mine?

Ask your daughter to unpair her Apple Watch via the Watch app whilst her iPhone is connected to it via Bluetooth and has access to the Internet via cellular data or Wi-Fi:

This will erase all content and settings from the Apple Watch and also remove Activation Lock, leaving it ready for you to use as your own by following the instructions here:
