Can I exchange (upgrade) iPad Pro (New Model) 10.5" 64GB received as a gift (purchased through Apple redemption program - Chase Credit Card) to iPad Pro (New Model) 10.5" 256GB?

See Returns & Refunds - Shopping Help - Apple  You can certainly return gift items purchased from Apple.  Normally, if within the return period, you return your item for a full refund, then simply purchase anew the item you want instead.

With gifts, you get an Apple Store card with the return amount in credit on the card, to be used towards your desired Apple Store purchase.  If you take it into an Apple Retail Store, I believe they can give you store credit for the returned item right then and there.

Call the Apple store number and talk to a store rep if you have questions about how to proceed.
