Lost in the cloud

I have a large library of music that I spent a lot of time downloading into Itunes and then put on my Ipad. This is handy for when we are out hunting or camping because I can play the music through my Bose speaker when we have no radio or internet. It seems now all of my music has been moved to the cloud and I don't know how to get back what belongs to me and make it stay put. I do have apple music but all of this seemed to take place after an ios update. Any thoughts how to get things back to the way they were? Thanks
