How do i delete songs from my iCloud library?

I want to know how to delete select songs from my iCloud library, reason being, I joined apple music tonight and since doing so and turning everything on that needs to be for it to work, I now have a lot of (not all) songs showing on my phone from my iTunes library, most of which I don't want on my phone. Also, a lot of the songs that are now on my phone are greyed out and when tapped on say, "Item not available, this item can't be played" How annoying, not only do I not want them on my phone but they are there and some can't be played lol. All the ones that can be played have the cloud symbol next to it, showing me its available for download.

I like to organise my library and it frustrates me I can't figure this out. Please help.
