App backup in iTunes 12.7, no longer a business...

I updated to IOS 11 on iPhone and iTunes 12.7 on my PC.

I have a millage app (trip cubby) that is no longer compatible with IOS 11, found out the hard way. I cannot open the app on my iPhone as it’s not compatible with IOS 11 (full of this year’s information and never more than 24 hours without a backup to iTunes) How do I retrieve the information from this now defunct app?

Furthermore, how are apps that record and store data to be backed up in iTunes 12.7? I use this as a business tool and require the ability to backup and retrieve the information when required.

Quite honestly the new version of iTunes seems completely geared for personal use and not for use in a professional setting.
