multitasking made iPad screen freezing

I JUST update my iPad iOS 11.0.1, was using iOS 11 yesterday.

While testing multitasking, I found out that it will freeze my iPad screen.

Please watch the video and test if anyone has same problem as I do.

Beside this problem, I would like to know how to do multitasking with the app that is not on the dock? On iOS 10, I could swipe left from the right edge of the screen and scroll down to choose the app that I want for multitasking. But it seems that I could only do multitasking from the app that is on the dock only in iOS 11, am I right?
