iTunes 12.7 works for one user profile, but not...

I received my iPhone 8P yesterday, and when I tried to restore from the backup of my previous iPhone, I was informed I couldn't use the 8P with my version of iTunes. I could only get the app store to see that I needed the update on my husband's user profile, install went fine, got his phone set up. When I logged back into my profile, iTunes acts like it opens, but no window ever shows up. I tried downloading iTunes and doing a fresh install, and it still doesn't work.

Any ideas on how I can get it to work without losing my backup?
