i want to remove apple pay from my account how do i do that

If you are referring to removing a payment card from Apple Pay, then follow the instructions here under "Remove a card":

• Manage the cards that you use with Apple Pay - Apple Support

If you are instead referring to your Apple ID payment method (including for iTunes Store, App Store, etc), then it may be possible to select None as your payment method.

If you are not able to choose None (even for downloading free apps and updating existing ones), then the following support article explains why that is the case:

Follow the instructions here as appropriate:  

• Pay an unpaid balance in the iTunes Store - Apple Support
• Change or remove your Apple ID payment information - Apple Support
