IOS 11 with iTunes 12.6.2.20

Hi,

Can I upgrade to IOS 11 from IOS 10 if I remain on iTunes 12.6.2.20 for the moment ?

 

Should I do the update in future, if I perform a local backup with iTunes and then a restore from the local backup, will the applications be redownloaded and put in the same folder as they are today ?

 

The folder with the apps with iTunes 12.6.2.20 can that be deleted without loosing anything ?

 

What is better, a restore from a local backup or from an iCloud backup ?
