Disabling Docs&Desktop on SierraOS

Hey,

so, some time ago I turned on the option to share all my files to iCloud. Apparently this was a mistake (in my case) so I wanted to disable it. Then I learnt, that once I do it, all my files from the computer will be gone (kept on iCloud tho).
Browsing around the web I found a solution that seemed pretty good - to move my files that are on desktop and documents to the other folder, such as downloads, then deactive iCloud and then bring everything back to it's place.
The problem is.. I got about 300GBs of data on desktop/documents. Now for the last like 15 minutes I try to move just 1, 5MB file. So if it takes so long to move 5MB file, it'd take forever to move 300GBs of data.

So here are my questions,

Any idea why it goes so slow? And also, if there's any way to speed it up, or other way to disable iCloud safely?

The problem with " just disable and then download from iCloud " option is that, right now almost half of my stuff on Desktop/Documents is not uploaded on iCloud because of lack of space. So if I do such thing, I'll also loose things I can't restore anymore.

Thanks in advance
