Change iTunes device backup password

I have forgotten my iTunes encrypted local backup password for my phone.  I want to do a fresh full backup with a new password before I update iOS, but iTunes won't let me reset the password without my old password.  Catch 22!  Is there a way around this?

You cannot reset a backup password. You will have to delete the encrypted backup, and restore the iPhone to factory, not using your backup, since the backup contains the backup password. See this support document for an explanation on dealing with encrypted backups. About encrypted backups in iTunes - Apple Support

Thanks for the super quick answer - I'll just keep poking at the password and maybe in a moment of inspiration it will come back to me.  And meantime iCloud backup.

You're welcome.

But how can I , for the future , create a backup that I can use if I dont know my password ?

I try first to change for a known password but to change it I have to know the old one ,  it doesn't accept a blank  password an old password to set a new one and I have never set a password
