Calendar 10.3.3: delete or change "all" or "all...

I have some calendar items that when I need to delete or change them going forward only offers me option to delete or change "all." This concerns me because I do not want to take the chance that this will delete or change past events, so I just delete each event, week by week.

Mysteriously, some of these events will revert to delete or change "all future."

So what's the difference, and how can I avoid creating events that will only say delete or change "all" so that I only delete or change "all future."
