How do I have the full email address display

When I add a name from my contact list in the To field of an email message only the name appears.  How do I make the name and full email address appear between, example  John Jones <jjones@none.com>.  Now I am only showing the name, example John Jones.

Have you tried clicking on the small downward arrow by the side of the name?
