Go back on Watch IOS versions

I have a Apple Watch 1 and use Runtastic Pro for my running and mountainbiking activities. With the last update of Watch IOS the Runtastic app was changed intro an stand-alone app and on a Apple Watch version 1 I can only choose for the activities walking, running and hiking, the road and mountainbike activities are only selectable on the Version 2 and 3 Watches. How can I set back the IOS version of Watch IOS and with this also to use the Runtastic version that synchronised with my iPhone 7.

Anybody Any idears as the Runtastic helpdesk is not realy working at all and the App is useless this way?
