How do I use an OLDER itunes backup of my Ipad ...

I have had a lot of difficulty since ios11 on my Ipad air. I only want to restore it from an older backup I made on Itunes in September. I can locate the older backup via preferences but I don't know what to do with it.

Can anyone give me step-by-step instructions on how to accomplish this? I would GREATLY appreciate it.

you can only use backups of the same version of ios and a backup made by iTunes or icloud does not contain ios it only contain your personal data

My personal data is exactly what I want to access! I don't care about changing the ios version.
