i want to to scan documents wirelessly using my iPad and HP printer. I am able to use AirPrint with these devices, and would like the same functionality with scanning to my iPad.

Unless you have an iPad app from HP for scanning, I don't think you can do it that way.

What you can do is use Notes, read below:

Use Notes on your iPhone, iPad, and iPod touch - Apple Support

You can then print it with your HP printer using AirPrint.
