How to see notes from a backup?

Bear with me, this is a tough one.

Background: Recently on my iphone 5c all of my notes just disappeared . I had a whole bunch of them and many of them were very important to me. I'm not to happy about this and i'm still trying to accept that some of them are just gone forever but I do have a backup from some odd years ago that may have some of these notes.

Here's the problem: I'm trying to access and view this backup through itunes or simply my computer files. I don't really need to backup my notes onto my phone, I just need to be able to see these notes and copy/paste them onto my computer for safe keeping. The only other problem is that this backup is located on a older laptop so the version of Itunes I'm working with is 11.2.2.3 on Windows Vista.
