Removing Protection on Protected AAC audio files

I have several Audio books downloaded through iTunes that I want to listen to on non-apple devices. How do I remove the protection so that I can create MP3 versions?

I have removed the audio books from iTunes and re-downloaded them from the cloud but the protection is re-applied once the books have been downloaded.
