Apple Watch 3 Questions

Hi there I have several questions:

1. Notifications on my watch opens automatically.  I just want the red notification dot (which I have) and the notification to stop opening (messages, text, email, etc).  Sometimes there are things I do not want others to see.
2. I have enabled a music playlist with my workout to play when I choose the workout program.  I like my music to shuffle.  I have shuffle enabled on the music app playlist but on the workout it always goes in order.  I'm tired of listening to the same set of songs every morning.  I just want it to shuffle the playlist!
3. When I try to compose an email it displays all my contact "groups" on my phone.  I just want my personal contacts and not my gazillion work contacts.
4. Texting - Is there a way when you speak your text to modify words that are spelled wrong vs cancelling the whole text and starting over?
5. Can you lock your watch screen?  When my watch is under my long sleeve shirts I have noticed it is on different things and not the home screen I have it set to.  I have a password but is there a button I can make the watch sleep?
