Which iMac to get? Return mine or keep it?

I recently purchased a new 21.7" 4k iMac with student pricing. I ordered the top tier selection, choosing to upgrade to these listed items: i7 processor, 16GB of ram, keyboard with numeric keypad, Pro Apps Bundle and AppleCare+. I also opted to keep the 1TB Fusion drive as I was misinformed in my research about what exactly it was.

Now that I have researched more, it seems that the fusion drive in general is not a good option and I should have opted for an SSD. The computer hasn't even arrived yet, and I am already thinking about returning it for a different option.

Should I  return the one I have, build a new 21.5" 4k iMac while keeping the same setup and pay $90 extra for the SSD; or should I maybe upgrade to a 27 inch with a different configuration? Total price including AppeCare+ with the free pair of Beats was $2,298.35. The computer itself was $1,989.99

I will be editing photos and video for church events, as well as personal. Also be used for video watching, light gaming (Sims 4, SimCity, and Cities:XL) and normal computer processing task like Word, Excel, Powerpoint, etc.
