Ever since I updated to ios10 yesterday, my music list has been flooded with undownloaded purchases.
How do I hide these? I can't find the setting anymore. I have checked General>..., iTunes & App Store>..., Music>...
Where is the setting to hide purchases anymore???

Note though, if you don't have any downloaded music, the category won't show up.
Tap Library at the top to go back to the main library screen, then tap Downloaded Music from the list.

Using the Downloaded Music category is a work around.
iOS9 you used to have the option to "Show Downloaded Music" which hid any cloud based purchased (i.e. songs not downloaded to your phone) from your device.
I've been trying to convey this to Apple Support, but essentially the equivalent of iOS9s "Show Downloaded Music" only option doesn't exist - and they won't even acknowledge that.
For me (and many others as seen on social media) the Downloaded Music category is not a sufficient option.

The Downloaded music category is exactly the same as it was previously when you opted to only show downloaded music. The Library (artist/albums etc) category is just the same as it was previously when you hadn't opted to only show downloaded music.
So now you have both and no need to do the messy switching, it's just 10 times better.
Exactly the same issue for me - it now seems to be impossible to hide iCloud music purchases so they just clutter up your music library. Another push from Apple to drive you towards streaming...

Here's my library with everything hidden apart from what is on my phone.

Making the ability to access just Downloaded music, or switch to all cloud stored music from a simple menu is "not a sufficient option"?

Correct, it's not a sufficient replacement option because in iOS9 we had this -
This option is not just a category, it entirely hid previously purchased music from the device.
This meant that if you were using a USB device to play (such as USB car stereo for one example) that device would NOT try to play the previously purchased (i.e. still in the cloud) music because it couldn't see them at all.
As it stands now, there are workarounds but NOTHING that matches this previously available option.
You can't even make the Downloaded Music category the default.
I think I understand now, you have a problem with the USB device that you are using your vehicle. Take a moment to look at the manufacturers name on the front of this device and contact them for assistance.
The real issue here is that the "Only Downloaded Music" option as pictured above has been removed from iOS10 and thus you cannot easily hide previously purchased music from your device library entirely.
The immediate work around for those wanting to achieve this is to hide any purchased music you don't want to see from your account entirely, they then become invisible to your device library Hide and unhide iTunes Store, App Store, or iBooks Store purchases - Apple Support
Long term the best hope for those who would like such a feature reinstated is to provide Apple Feedback.

Unfortunately, the only fix I found was to log out of your itunes account which doesn't work well if you want updates. I also notice that if you log back in, Apple music automatically creates a "Purchased Music" playlist for you. I've turned apple music off multiple times and it randomly gets turned back on (probably through logging in my itunes account).
EExactly. It shows m I've paid for and some I've added from CD-ROM but not all, it is a step backwards. there are songs my wife downloads for our children which I find offensive (one direction etc) to be able to see on my iPhone.
Likewise - I'm not keen on my 8 year old having her teenage brother's tunes showing up on her iPod, as they are both under my account.
