I understand you need some help connecting your Bluetooth headset to your Apple Watch. Have you been able to connect with this headset before? If the headset is working with your iPhone, try un-pairing it from the iPhone and any other devices it may be paired with. Then restart the Apple Watch and the headset and follow the instructions below:
