How do I go back to a version of itunes that ba...

I only use itunes to manage my iphone.  Backup, sync, restore and etc.  Three days ago I needed to reset and restore my phone and thankfully had not updated to the latest version.  I don't need or would even use all this music handling.  I would like to go back to a version that is useful to me.
