iTunes could not back up the iPhone because an ...

I'm trying to back up my iPhone 6s Plus to the latest version of iTunes (12.7 on a MacBook Pro Mid 2014) and I am receiving the following error:

iTunes could not back up the iPhone because an error occurred while reading from or writing to the iPhone.

I have not tried to back up to iTunes before. I have tried with different cables etc. to no success.

Short of restoring the whole iPhone, is there anything I could do differently? Any help is appreciated.
