Get backed up photos to new device without full...

I am getting ready to activate my new iPhone 8. I've backed up my current iPhone to iCloud. Since this is my 3rd  iPhone I've decided to just start clean with a new activation instead of using the backup again to restore. A nice clean slate so to speak. Is there a way to just import my pics and contacts from the backup into the newly activated phone and not all the old apps?  Separately, does the "clean slate" method even make sense?
