"Encode selected video files" has been removed ...

I discovered that I have a bunch of QuickTime files using an excellent but now-defunct codec (Sheer). If I install the codec, QT Player will read the files but convert them to crappy H.264 without offering any choice.

Someone pointed out that you can right-click on video files in Finder, and under the Services menu there's supposed to be an "encode selected video files" option. Some screen shots and Web sites from a few years ago show this, but it is not present in 10.12.6:

I don't suppose anyone knows when this disappeared or why...
