Apple Watch attached to iPhone without sim card

I have an old iPhone 5s that works just fine. Small screen but all works.  I have Google Pixel (I know, don't hate me) with a much larger screen and capacity.  I am going to get a new iPhone as soon as I can but in the meantime.......

I won an Apple Watch I would like to use before I get the new iPhone. So my questions are the following:

Can I continue to use the Pixel for phone and sms for now, but pair the Apple Watch to the iPhone 5s (with no sim card installed) so I can use the Watch for everything but phone and iMessages? Can I use it as a smart watch for everything but phone and sms?

thanks, I thought so but wanted to be sure.  Other than phone calls and iMessages, can you think of anything that the Apple Watch can do that it will not be able to deal with if the iPhone does not have a sim installed?
