I deleted an iMessage conversation from my phone.  Is there a way to restore that?

You have two options: Either through iTunes or iCloud

If you have iTunes or iCloud backup files when you have the iMessages chat history with the person, you can restore your iPhone with the backup file.

However, you need to know that if you restore your iPhone, all the data you added to your iPhone after the backup will be wiped from your iPhone.
