Eldercare using apple iPad/imac

Hello, just wondering if anyone has had any success using apple products for monitoring of an elderly senior. My scenario would be a 85 years old stepmom with some memory issues living in another city, I have both iphone/ipad/imac and would like her to use an iPad on her end for very simple access to say video calling (for her to accept calls from 4 different family members and make them herself) , maybe simple texting (i.e. sending reminder texts to her etc) and sharing pictures to her iPad. The video calling is not intended to replace her landline, just for family member contacts. The key part is to have something that presents maybe only 4 or 5 large buttons to hopefully eliminate some of the confusion for her. A bonus would be for me to be able to access her iPad  remotely should she encounter problems. I know I can dumb down the native apple apps (hid them in folders etc) but am very interested in what kind of solutions forum members have come up as well as any well regarded third party apps that fill the bill.
