IOS iTunes autoplaying in our cars

When my wife or I get in either one of our cars, the iTunes music player(?) starts. Not only is this annoying, but it prevents me from using Apple music, so why have a subscription? The music player seems to override anything I manage to get started from Apple Music. Using a 6S and a 7, both with 11.0.3.
