How many past backups are on my phone?  I ...

Can I restore my phone from an older back up or only the most current back up I have lost all of my text history and I'm trying to get it back

No backups are on your phone, they are either on your computer or in iCloud (depends on how you chose to backup) and if that is all you have, it is not enough.

I understand I have to go to the cloud to get the back up I understand it's not on my phone. My question is  when I go to restore the phone it wants me to delete all of its contents and then it will allow me to choose to restore the phone when I choose to restore the phone is it going to give me multiple iCloud back up dates to restore from

You will have the option of restoring from any backup you have made and stored.

Will the past back ups be there automatically or did I have to make some choice or do something manually to make the back ups be stored

If there are multiple backups saved you will see them, and you can choose one to restore. If you are worried why don't you take a look.
