How do I restore the complete backup from my iC...

Trying to restore data I've accidentally deleted for an iPhone 5s. I have missing data after recovering from an iCloud backup that is not the latest backup. For example, one of the data I've accidentally delete was for Notes. After trying to recover the data from an older iCloud backup, the data is there in the Notes for a few seconds then it's replaced by the latest backup on the iCloud. (Not only the Notes, but some apps seems to be missing as well.)

How do I restore the complete backup from my iCloud backup?
