How can you connect an old laptop (pro) to use as a monitor only?

Mac notebooks aren't made to be used as monitors. You could use something like Screen Recycler, but that's not a very good experience for most people's needs.

No. Only certain iMacs can be used that way. There are some USB devices that will do that but are very slow. See Matrox products. Or look at Screen Recycler software.
