MAC iTunes iOS apps removed questions

I understand that Apple has removed the iOS apps from the iTunes on the Mac, supposedly to make iTunes concentration based on content Music,Movies TV Shows etc...  I think this is a step backwards maybe someone could convince me otherwise or at least answer a couple of questions:

 

#1) I used to update all my iOS apps on the mac in iTunes, then connect each device and update the device via a sync. This can no longer be done. Using this method I downloaded the app once and it updated all devices. If say I had 3 devices which required an app update of 1Gb the Old way used up 1Gb of bandwidth and say 10 mins , now I have to use up 3Gb of bandwidth and 30 mins spent updating the same three devices. Is this correct in theory?

 

#2) I've never used auto app update on a device (used process in #1) often developers make an app worse than the previous version or break it completely. Is there a way to turn off auto update on a per app basis, so critical apps only update when I manually force them to? 

 

#3) I also used Mac iTunes to manually move apps around my device's screens etc.. Also to move the order in which device screen pages appear. Is there any way to do this via the mac anymore, or I'm I stuck trying to drag/drop via the device screen only?  Is there a way to re order entire screen pages on a device, from the device.
